Which has been spent playing DS (damn you Mario!!!!) watching a monk all dayer (The TV series not some sort of held prisoner holy brother), watching te latest Lost (best episode yet) and making ranch style baked beans.
With a bit of searching around you can get most food in Japan that is except baked beans, surely England's proudest export! Sadly they also happen to be T.O.H's favourite. A friend of ours has his mother post him cans each month which adds up to quite a cost.
So rather than get a can in the post each month I've found a way to make our own using Pinto beans bought whenever we visit Osaka.
As usual feel free to add your own suggestions ideas and comments.
Ingredients.
1 can of pinto beans (and liquid)
1 can of chopped tomatoes
1 or 2 green bell peppers (chopped)
1 onion (chopped)
1 green chili / jalapeno pepper (chopped)
2 cloves of garlic. (crushed)
1 tablespoon of tomato sauce.
1 tablespoon sugar
1 teaspoon parsley
1 teaspoon of oragano.
salt and pepper to taste
3 slices of bacon.
2 tablespoons sunflower oil.
Heat the oil in a heavy bottomed pan, add bacon and fry until it begins to brown. Add the onion, crushed garlic, green peppers and chilli/jalapeno and cook until soft. Add the rest of the ingredients stiring well to mix, put on a lid and simmer for 25-30 minutes stirring occasionally. The mixture should cook down to a deliciously thick sauce.
Serve with toasted bread, cheese and what not.
