Oh the Internet, provider of gossip, giver of weather reports and American TV and finder of recipes. I use site like all recipes. com and cooks.com a lot usually finding ideas reading the comments provided and and then adding my own things to it (usually my own things are more dried parsley but still..) The other day I wanted to try something new and thankfully stumbled across this recipe. I think it was the memory of sitting down at 5 in the afternoon to watch Nightmare on TV as I ate my dinner of turkey kebabs that convinced me to try, thankfully everything turned out beautifully (although can some one tell me is it supposed to be Kebabs or Kababs???).
I've kept to original recipe as it is and only added more veg to it, the sweet corn seemed a nice add on.
This is for 2 people.
2 tablespoons of vegtable oil

2 tablespoons of vegtable oil
1 and a 1/2 tablespoons of light soy sauce
1 teaspoon of crushed black pepper2 chicken breasts, cleaned and washed and cut into 1 inch chunks
1/2 an onion cut into chunks
2 or 3 green bell peppers (depending on size) cut into chunks6 baby sweetcorn cut into halves.
8 button mushrooms washed and left whole.First in a large bowl combine the oil, soy sauce black pepper and honey, mix well until smooth. Add the chicken and chopped veg, mix until everything is nice and coated. Cover and refridgerate for at least 2 hours, stirring occasionally.
After 2 hours remove chicken and veg from fridge, remove from marinade (which to you retain) heat your grill onto high and brush a grill pan with oil, thread chicken and vegetables onto the skeewers, and grill for at least 25 minutes until the chicken uice run clear, whilst grilling turn and brush with marainade occasionally just be care of the hot sticks! If you find the veg cooks before the chicken, put it onto a seperate skeewer and remove when the veg is done
To serve T.O.H made a simple but lovely mixed salad of roso lettuce( sorry I'm not sure about spelling) , half a thinly sliced onion, salad noodles and edamame (Soy beans in their pods covered with boiling water for 2-4 minutes then de poded, good bar snack material) and cesar dressing. This really complementedthe kebabs so much so we've had them two times in a row, always a good sign
