Food hop 3; stir fried pork and fragrant rice or stephanoia

Japan is a wash with small, quick eat resturants for those salary men on the go (and A.L.T's too lazy to cook) it's best to think of them as like Subway, but with more rice.
Anyway one of my favourites is Yoshinoia, apparently popular in America but has yet to find its way over to blighty so come on someone over there I'm sure drunk clubbers are dying for something nice, healthy and tasty rather than that left over kebab they find in their trouser pockets. They usually serve just four dishes, (yeah I'll say that agian 4!!!! dishes) with different meats cooked in a nice sauce over rice and the other night I attempted to make my own version which (if I do say so myself) turned out pretty well.
three quick notes:
The sauce its cooked in has been taken from my wagamama's (which I think means selfish in Japanese) cook book and makes a big batch, you only need about 4-5 tablespoons but as it keeps for ages in tuperwere don't feel you have to throw it away.
Rice cookers: I'll post about these later but I LOVE love loooove my ricecooker, just put in the rice, clean it a few times, put in water and then leave it to cook and hey presto. But don't worry if you havent got one, just use a saucepan like usual.
As theres Soy suace in this already I don't like to add too much extra salt, try it without first and then add if you think it needs some.


anyway end of notes now for the ingrediants. This is enough for 2 people

Sauce
6 tablespoons sake
180 ml light soy sauce
6 tablespoons mirin
1 tablespoon caster sugar

rice - 1 cup well washed to remove starch and any other fluff (by the ay I'm using japanese rice so check instructions for any ctypes)
chicken stock cube - 1
pepper to taste
parsley - 1 teaspoon
oregano - 1 teaspoon
light soy sauce - 1 and a half teaspoons

main meal
pork - 220 -250 g's ( I buy small thin slices of pork with some fat on them, try different slices and tell me how it went)
2 green chillies (deseeded)
1 small onion
2 cloves garlic
green peppers (either 1 big or 2/3 small ones)
mangetout - 12 cut into thin strips
sesame seeds - 1 tablespoon.
vegetable oil - 1.5 tablespoons.

First follow Nigel Slaters instructions and pour your self a nice drink, tea, coffee, wine, white Russian etc etc..

Now make up the sauce, put all the ingrediants into a saucepan and heat gently until all the sugar disolves stir and then turn off heat.
cut the meat into small piece or long strips (depending on your tastes) chop the green chillies into small rings crush the garlic cloves and then add to the meat. Add 4-5 tablespoons of sauce then mix with your hands until the meat is well covered. Add more sauce if neccessary until the meat is well covered. (the spare sauce can be kept in the fridge for next time)

leave the meat to marinate in the fridge for at least 45 minutes.

about 30 -40 minutes from cooking, start the rice. Put the rice (washed) in a pan and add a cup and a half of water, add stock cube, oragano, pepper, parsly and soy sauce. Then bring to a boil (to prevent really sticky rice stir only once or twice whilst its boiling then leave to cook) put on the lid and leave to simmer (or if you have a rice cooker simply add the ingrediants, put it on for 38 mins and press start) check occasionally to ensure the rice doesn't stick to the pan.

to make the MEAT HMMM MEAT it only takes about 10 minutes.
chop the onion into big chunks, deseed and chop the pepper and take the meat out of the fridge and out of the maranade reserve any spare maranade for later.
Heat a wok for 1 min over a medium high flame then add oil and heat for another minute. Add the onion and cook until it begins to soften and turn see through. Add the meat and pepper and continue cooking stirring frequently until the pork is cooked (about 5 mins), you can add the maranade at this point or if the pan gets too hot. Add Mangetout and seasame seeds and cook for 1 -2 mins.
Divide the cooked rice into two bowls and top with the pork; enjoy eating under a heated table whilst watching a programme presented by a chimp, or, whilst watching coronation street and a beer.
